We went. We saw. We couldn't eat. We left.
In 2010, Connie Veilleux (founder/owner of I Found It Bakery - long before it was even a glimmer), and her teenage son visited an Immunologist. Suddenly they were faced with the need to be gluten and dairy free for health reasons. Doctor’s orders!
Not only did she have to give up many foods that were common in her diet, but this news also curtailed her passion and hobby – baking. This created an all-consuming food shift. Being an award-winning baker who suddenly couldn't turn out all the beloved familiar treats from her classic recipes, Connie had to make a food paradigm shift of major proportions. A decade ago there weren't many gluten-free (and definitely not dairy-free) options available - at least not ones worth mentioning.
After years of altering and adapting original recipes, the original desserts and breakfast treats were again safe. And, yes, they met the taste desires of those on gluten and dairy-free restrictions. Okay! The big test was - would these treats meet the expectations of free-range eaters? The product had to meet that objective. They had to be equal to the best in the free-range world.
Connie went on to publish a website for the gluten-free, dairy-free community, currently running for over 8 years, building up her extensive knowledge base of the crazy alchemy that occurs when gluten and milk-based ingredients are omitted in the baking dynamic. She was published in various online blogs and web publications.
With successes achieved in extensive, hands-on research in the kitchen, she earned her way into the kitchens of others. She was invited to collaborate with numerous chefs at catering and prestigious, private dinner seatings, providing gluten-free, dairy-free desserts to countless guests, some who had dietary requirements and most who did not … none of whom were originally aware the desserts they were served were in the “special dietary needs” category. Furthermore, she heard declarations of, "scrumptulicious!" and "fanfreakingtastic".
Through sharing her desserts in these settings, she was able to experience the exhilaration of providing safe, delicious desserts to someone with special dietary needs, and their heart-felt gratitude. That first-hand experience was magical. When it was revealed the dessert they just enjoyed was in fact both dairy and gluten free, they were surprised. They hadn’t known. That experience was truly special and very moving for Connie.
That was the seed for I Found It Bakery. An opportunity to create a delicious and memorable impact in people’s lives … one safe bite at a time.
